Fruitcake...
Make up what ever recipe you use then fill the jar half full then can at 10 pounds for about 50 minutes. Use wide mouth pints. Spray the jars with non-stick spray first. I have never tried canning other cakes but I do know it is done. Some of my OLD canning books have lots of strange recipes. When we lived on the Tok cut-off (I was a child) we used to raid the garbage dump because you could find case after case of military rations... one of my favorite was the small tins of pound cake. I have never tried it but I see no reason it could not be canned as well.
